Batch 9 is in the keg

I put Batch 9, my honey-wheat beer, into the keg today. It's wicked-clear and very dry. Initial gravity of 1.062, final gravity of 1.002, for a final strength of 8.3% alcohol. That's light for a mead, but strong for a wheat.

It's still a bit cloudy from being shaken up by kegging, which makes it bitter. Once the keg has settled and I've blown out the junk from the bottom, the bitterness should subside some. It still tastes pretty green though, and I'm going to need to check it once a week or so to see how it's coming. In an ideal world it would be ready to drink by next weekend, but Halloween is about the earliest I can expect, and it might not be until Thanksgiving or Christmas. If any remains by Penguicon, and it's drinkable, this is going to be one heck of a party brew.

Yeast recommendation

Per Paul Paranzky, Wyeast #3638 greatly reduces the esthers. Have to remember this for the next wheat beer brew.
